For L-1011's - it's my favorite aircraft so I'll probably buy anything, but many of those already mentioned would be great - for sure the Delta Widget is top priority for me.
And for 757's - also Delta (Ron Allen colors and Deltaflot) would be my picks.

How about an EL AL 757 in the delivery scheme. Unlike most of the aircraft listed in previous posts, it's one model never made by anyone and requested by many.

I figure this one kinda goes without saying, given how they had the largest L1011 fleet in the world. But, Delta.
NG would be able to do a significant number of releases, given how many different types Delta operated. All with discernible external differences, slight as they were:

Out of curiosity, why N727DA?? Structurally, there was nothing unique about it - just one of the standard dash-1's. N724DA was the lone dash-1 that was modified into a dash-200, for flying ATL-HNL and DFW-HNL. Later supplemented by the dash-250 ships.

That said, given how NG has already developed the Honeywell test plane, I'd imagine the F-22 test plane isn't entirely out of the realm of possibility.

I'll add my vote for Monarch, Air 2000 and Icelandair 757s in their 90s livery. Add First Choice (late 90s, early 00s livery) and Thomson Airways circa 2014 to that too. A bit of a long shot but how about Helios Airways?
As for 738s, A Norwegian Air Shuttle would be nice, LN-NGB would be particularly nice for me!
B789: I'm due to fly on Air Canada and BA examples next year so they would be good.
L1011: Anything with a G- registration plus a Gulf Air.
