When I was younger I got to ride in one at the Old Rhinebeck Aerodrome in the 1980's...
Old Rhinebeck Aerodrome | America’s Original Living Museum of Antique Airplanes!
The ride was a one-off, the plane wasn't a part of their collection (although they do regular rides in a 1929 New Standard pretty cheap.) It was a blast!
Open cockpit is the way to go! Make the pilot at least do some aerobatic manuevers...best thing to ever happen to me was a hammerhead in an open cockpit plane! Having the plane just slow down and then fall over the wing...friggin' awesome. Also, not too much stress on the plane!
Make sure you hold on to your camera in the plane...a hand strap is an almost must. And keep it out of the slip stream...shooting with the camera in and around your body will keep it from getting blasted by the wind and throw into the pilot's face behind you. Very bad form! Good luck and have fun!
