Singapore Airlines for sure! Dragon Air is my second favorite! Then JAL tied with EVA followed by United, Cathay, and ANA tied.
ANA would have been tied with Dragon Air or JAL, but their announcements take to damn long. There is a pause in between each word...and sentence...that would drag out a 1 minute announcement to 5 minutes. On a 2.5 hr flight they showed a movie, of which I was only able to watch 1 hr 15min because of the numerous announcements, among other things (eg take-off, landing)! I used to love Cathay but on my flight from JFK to HKG my opinion changed. The food that I thought was great at one time was no better than United's...actually preferred United's over CPs. ( )

I like Singapore Airlines the most (their image, their colours, etc)! I also like Air Canada (probably because I'm Canadian)!

I haven't been on an aircraft in 6 years, and then only on AirTran (no sir, didn't like 'em) and AA, which has gone downhill in quality over the years. Sentimental favorites are Delta and British Airways, both from the 70's to the late 80's.
