Pitch! UA 763 had the least pitch of anything I've ever been in, except perhaps a SF-340. Like 29 inches or something. It was an almost brand-new 763, in their new deep-blue interior--which also means less pitch and narrower seats! Older UA planes are much better.
All my DL flights were good, but the 763 and 762 were tops. Decent spacing, and I swear slightly wider seats than most.
I'm trying for a F-100, 738, CRJ-700, and RR-powered 752 this summer (guess who I'm flying) and will see how they are. (Been a long time since my last 757)
PS--notably good is the last couple rows of a DC-10--lots of room, as the tapering rear fuselage forces them to remove a few seats, thus making lots of room for the last 3 rows or so.
Only plane I've ever slept on: AA A300. Whether it was due to weariness or being on a big comfy Airbus, I'll never know.
